Stuffed Crust Pesto Pizza
Fancying a Friday Night Pizza? Why not try this one with a crust stuffed with gooey cheese and topped with pesto and fresh vegetables? It's definitely worth a taste!
Serves 2
INGREDIENTS
1 Packet or Portion of Pizza Dough
Cheddar Cheese
Tomato Paste
1 Tablespoon Pesto
1/3 Red Onion
1/3 Red Pepper
4 Baby Plum Tomatoes
Mozzarella Cheese
Fresh Basil Leaves
Olive Oil
Balsamic Glaze
Rocket to Top
METHOD
Preheat your oven to 200°C.
Roll out your pizza dough into a square, place on top of a pan lined with baking paper.
Slice thin strips of cheese and place them in a rectangle approximately a centimetre in from the edge of your dough. On the inner side squeeze a line of tomato paste.
Pull the edge of your pizza dough over the cheese and tomato paste and press down with your fingers to form a seal.
Spread a tablespoon of pesto over the middle of your pizza dough.
Thinly slice approximately 1/3rd of a red onion and a red pepper. Add to the top of the pizza.
Slice 6 rounds of mozzarella approximately half a centimetre thick. Halve approximately 4 baby plum tomatoes and add to the top of the pizza.
Add the basil leaves, remember to tuck them under some of the other toppings so they don't burn.
Drizzle over some olive oil and balsamic glaze.
Put in an oven for 10 minutes.
Take out the oven, top with rocket and serve hot.
