Summer Vegetable Pizza

Topped with roast summer vegetables this pizza is definitely one of my favourites.

I recently have found Violife Mozzarella Flavoured Grated, such a game changer for anyone who is lactose intolerant! It melts like normal mozzarella and tastes great, I would recommend it for anyone who's dairy free. If you’re not you can always substitute it out for normal mozzarella.

Makes 2 Pizzas

INGREDIENTS

2 Portions Pizza Dough

2 Tablespoons Tomato Paste

1 Courgette

1 Aubergine

1 Red Onion

1 Red Pepper

1 Tablespoon Mixed Herbs

A Pinch of Salt and Pepper

Violife Mozzarella Flavoured Grated

METHOD

Preheat the oven to 200°C.

Slice your vegetables finely, lay into two baking trays.

Top with some oil, a tablespoon of mixed herbs, a pinch of salt and pepper. Then put into the oven for approximately 10 minutes.

Roll out your dough to the size pizza you want.

Squeeze a couple tablespoons of tomato puree onto the base and spread with the back of your spoon.

Sprinkle the Mozzarella flavoured grated “cheese” over the tomato base.

Take the roasted vegetables out of the oven when soft and add them to the top of the pizza.

Put in the oven for 10-15minutes until the crust has browned and cheese melted.

Serve hot.
