Pesto Spinach Linguini
This Pesto Spinach Linguini is a creamy and comforting meal for a cool autumn evening.
INGREDIENTS
1 Packet of Fresh Spinach Linguini
1 Onion
1 Orange Bell Pepper
1 Large Handful of Spinach
1 Large Egg
100g Grated Parmesan
1 Large Tablespoon Pesto
Salt and Pepper to Taste
METHOD
Put a pan of lightly salted water on a medium heat and bring to boil. Once boiling add the spaghetti and some olive oil. Leave to simmer until spaghetti is al dente.
Finely slice an onion and the orange pepper and add to a frying pan over medium heat. Stir the vegetables until slightly browned.
Add a slosh of oil to the pan and continue to let the vegetables soften.
In a mug mix together an egg, the grated parmesan and the pesto.
Drain the linguini and add to the frying pan with the pesto mixture and the spinach.
Toss everything together until well coated and the spinach wilts. Add salt and pepper to taste.
Serve warm and enjoy!
