Kale and Walnut Pesto Linguini
We have a load of Kale growing in vegetable patch at the moment so I've been looking for new ways to use it up. One of my favourites so far has been in this Kale and Walnut Pesto Linguini. Light, fresh and filling, perfect for a Monday night!
Serves 4
INGREDIENTS
Four Large Handfuls Kale
50g Walnuts
50g Parmesan
150g Olive Oil
A Large Teaspoon Minced Garlic
2 Brown Onions
A Head of Broccoli
300g Linguini
METHOD
Top up a pan with cold water, put on a medium heat and bring to boil. Once boiling add the Linguini. Leave to simmer until Linguini is al dente.
While the Linguini cooks, finely slice two brown onions, add to a frying pan on a medium heat with some oil and leave to soften. Slice up a head of broccoli, when the onions start to soften add the broccoli with a large pinch of salt. Keep in a medium heat until the broccoli is cooked.
While the pasta and vegetables are cooking, rince the kale and add it to your blender
Grate your parmesan into the blender, add your garlic and walnuts.
Turn your blender onto a low setting and slowly pour your olive oil in. This helps to make an emulsion.
Drain your Linguini and put it back into your frying pan with the onions, broccoli and half the pesto from the blender. Mix together until the linguni is well coated.
Serve with some grated parmesan on top.
