Beef Hotpot
On these cool windy days I love to put on a an easy one pot to warm up to in the evening. This Beef Hotpot is simple to throw together and tastes amazing when done. The beef melts in your mouth in a rich gravy.
INGREDIENTS
500g Diced Stewing Beef
1 Brown Onion
4 Carrots
1 Baking Potato
1 Beef Stock Cube
A Handful of Plain Flour
2 Teaspoons Mixed Herbs
Salt and Pepper to Taste
Method
Preheat the oven to 180°C.
Roughly peel and dice the onion and carrots. Place into a casserole dish with some oil and put over a medium heat until the onions start to soften.
Put a handful of plain flour on to a plate and toss the diced beef in the flour until it’s well coated.
Add the beef into the casserole dish and stir everything together until it is lightly browned.
Add the stock cubes and mixed herbs to the dish and pour over approximately 1 litre of boiling water and stir until the stock cubes are dissolved and the liquid becomes thick.
Leave the pot to simmer while you peel and slice the baking potato.
Arrange the slices over the top of the dish and put the dish into the oven for approximately an hour.
