Creamy Courgette Pasta

This Creamy Courgette Pasta is a Chris twist on my two all time favourite pasta dishes. It's a mix between my courgette pasta and his carbonara, with spinach and asparagus added. Honestly so good!

INGREDIENTS

300g Pasta

1 Brown Onion

2 Courgettes

1 Bag Spinach

1 Bunch of Asparagus

1 Teaspoon Minced Garlic

1 Teaspoon Onion Salt

1 Egg

A Small Chunk of Parmesan

A Pinch of Fresh Coriander

A Pinch of Fresh Basil

A Pinch of Fresh Parsley

1 Cup of Pasta Water

METHOD

Put a pan of salted water on to boil. When the water gets go a rolling boil add the pasta. Cook until Al Dente.

Chop up your courgette and onion. Add them to a hot pan with some oil, the garlic and onion salt.

Cook until they start to soften.

Roughly chop up your spinach, asparagus and fresh herbs. Add to the pan for a minute or two.

Take a cup of pasta water and set aside.

Drain the pasta.

In a bowl grate your parmesan cheese and crack your egg over it. Mix together until combined.

Add the pasta, cup of pasta water and you cheesey egg mixture to the vegetables stir through for a minute.

Serve hot with some grated parmesan on top.
