Barbecued Cajun Chicken Pita Sandwich
I am so glad the sun has come back out again. It provides the weather needed to have a midweek barbecue. This Cajun Chicken Pita Sandwich is perfect easy meal to make on the barbecue. It takes minimal preparation and tastes amazing.
Serves 8
INGREDIENTS
4 Chicken Breasts
Tomato
Cucumber
A Large Handful Spinach
8 Pita Breads
Cajun Spice
Garlic Mayonnaise
METHOD
First thinly slice the cucumber and tomato. Wash and roughly slice the spinach. Place aside for later.
In a bowl add two tablespoons of Cajun Spice and a glug of oil, mix together.
Slice your chicken breasts in half then add them to the bowl.
Coat the chicken in the oil and seasoning and grill on the barbecue or in your oven until the meat is cooked through.
Place your pita bread on the barbecue or in a dry frying pan on high heat for a few seconds each side to heat up and expand. Take them off the heat and build your sandwich.
I tend to find it easier to place the chicken in first then stuff the spinach, tomatoes and cucumber.
Finish by drizzling over your favourite garlic mayonnaise.
Serve warm on their own or with a couple of barbecued vegetable kebabs.
