Chicken and Plum Casserole
I love coming in from a cool, crisp afternoon walk to a warm comforting meal and my mum’s Chicken and Plum Casserole hits the spot every time. The plums give the chicken a rich, sweet flavour that will make you ask for seconds.
INGREDIENTS
2 Large Onions
1 Chicken
1 Small Packet Prunes
1 Tablespoon Mixed Herbs
1 Chicken Stock Cube
METHOD
Preheat your oven to 180°C.
Dice your onions, and add them to a large casserole pot.
Lightly fry the onions in olive oil until soft.
Add the whole chicken, mixed herbs, prunes, stock cubes and hot water to the pot. You want to just cover the chicken chicken.
Put lid on your pot and place it into the oven. Cook for approximately 90 minutes.
Take the pot out of the oven. Lift out the chicken and remove the skin and bones from the meat.
Add the meat back into the pot and put back into the oven for 30 minutes. If the sauce is looking very thin it can be thickened with cornflour if needed.
Serve over a bed of rice and enjoy!
