White Chocolate and Raspberry Cookies
Today I’m sharing my go to recipe for these White Chocolate and Raspberry Cookies. This is my all time favourite flavour combination for cookies so of course I had to share them with my family and friends to cheer them up during lockdown!
INGREDIENTS
200g Butter
350g Soft Brown Sugar
1 Large Egg
250g Plain Flour
1 Teaspoon Baking Powder
70g White Chocolate Chunks
10g Freeze Dried Raspberry
METHOD
Preheat your oven to 170°C.
Place the plain flour, baking powder butter, egg and sugar into a large mixing bowl. Beat together until it forms a dough.
Add the white chocolate chunks and freeze dried raspberries into the bowl, mix them into the dough.
Take approximately a tablespoon of the mixture, roll into a ball and place onto a pre lined baking sheet.
Press down on each ball slightly. Then place the baking sheet into the oven for approximately 12 to 15 minutes.
Take the cookies out of the oven and leave them on the tray to cool slightly, before transferring to a cooling rack.
