Asparagus and Leek Pasta
After the pancakes yesterday I’m looking for something a little bit more healthy. Tonight’s meal is this Asparagus and Leek Pasta.
Seasoned green vegetables, tossed through pasta, with a little bit of homemade Mediterranean Oil, this meal is simple but flavourful!
INGREDIENTS
300g Pasta
10 Asparagus Tips
1 Leek
1/2 Head of Broccoli
1 Onion
4 Cloves of Garlic
1 Teaspoon Mixed Herbs
1 Teaspoon Basil
1 Teaspoon Onion Salt
Mediterranean Oil
METHOD
Place a large pan of salted water over a medium heat and bring it to a rolling boil. Add your pasta and cook until al dente.
Dice your onion, leek, broccoli and asparagus roughly into 2cm chunks.
Add some oil, onion salt, mixed herbs and basil into a large frying pan. Mince the garlic and add it to the frying pan.
Place the frying pan over a low heat and add your diced leek and onion. Mix together and stir intermittently until they brown.
Add the broccoli and asparagus to the frying pan and mix everything together. Leave simmer for a few minutes.
Drain your pasta and add it into the frying pan. Toss everything together with a little more oil and serve hot.
