Sausage Tray Bake
Not sure what to make this week for dinner? Why not try this one pan Sausage Tray Bake. It can be made with whatever sausages you have to hand fresh or frozen, meat or meat free. Super simple and filling, best of all theres only one pan to clean up after!
Serves 2
INGREDIENTS
2 Medium White Potatoes
4 Sausages (I used frozen vegetarian ones but you could use fresh meat or vegetarian ones too)
1 Courgette
1/2 an Aubergine
2 Red Onions
1 Tablespoon Oregano
1 Tablespoon Garlic Granules
1 Tablespoon Parsley
1 Large Pinch of Salt
METHOD
Preheat the oven to 200°C.
Roughly dice the vegetables, put into medium baking tray.
Cut the sausages into thirds and add to the tray.
Drizzle over some oil to coat the ingredients in the tray (I used homemade mixed herb and rapeseed oil). Add your herbs and salt. Toss everything together, try to keep the sausages to the top to brown off.
Put in the oven for approximately 45 minutes, tossing halfway through.
Serve hot.
