'Make Your Own' Vegetarian Burritos
Want something simple and fun for dinner? Why not try these 'make your own' Vegetarian Burritos?
Serves 4-6 (depending on how hungry you are)
INGREDIENTS
Tortillas
2 Large Red Onions
2 Red Peppers
2 Courgettes
1 Tin Black Beans
1 Cup Rice (or 1 microwave bag of rice)
1 Packet Fajita Spice (or 1tsp of each of the following mixed together: Cumin, Paprika, Cayenne Pepper, Salt, Oregano, Basil, Parsley)
METHOD
Preheat the oven to 200°C.
Put the rice into a medium pan, add 3 cups cold water and place on a medium heat, stirring regularly to stop the rice from sticking to the pan. The rice should be done when it absorbs all the water added, if not add another cup of water and continue to cook.
Empty the tin of black beans including the water into a small pan, add a large pinch of salt, half a teaspoon each of paprika and garlic granules.
Put pan on a medium heat and leave the beans to warm through and simmer.
The vegetable filling is basically a sheet pan fajita filling. Slice the onions, peppers and courgette into thin strips.
Place the vegetables on a baking sheet or roasting tray and coat in vegetable oil and the fajita seasoning.
Toss the vegetables and seasoning together so they are well coated and place the tray in the oven for approximately 20mins (it should look similar to photo 3 when done).
Once all the fillings are done, put in separate bowls and serve alongside the tortillas. Tonight we added grated cheese and garlic mayo as extra toppings unfortunately we didn't have any salsa, sour cream or guacamole in the house. Feel free to add whatever condiments you want.
To put together a burrito place a tortilla in the middle of your plate, add your fillings to the middle of the tortilla. Fold the tortilla over the filling at the top and bottom so it looks rectangularish then from one of the free ends try and cover the fillings and roll up.
