Oat and Raisin Cookies

There’s something great about a freshly baked Oat and Raisin Cookie.

INGREDIENTS

200g Oats

350g Plain Flour

225g Butter

175g Golden Caster Sugar

175g Soft Brown Sugar

2 Eggs

200g Raisins

2 Teaspoons Cinnamon

1 Teaspoon Salt

METHOD

Preheat your oven to 200°C.

To a large mixing bowl add your sugars and butter. Mix together with an electric mixer until the mixture is light and creamy.

Next add your eggs and cinnamon to the mixture.

Once the mixture is smooth add in your oats and flour. Mix together until well combined before adding the raisins to the mixture and stirring them in.

Take approximately a teaspoon of the mixture, roll into a ball, then flatten slightly on a greaseproof paper lined baking tray.

Place the tray in the oven for approximately 12 minutes. Take out and leave too cool slightly before transferring them to a plate.
