Browned Butter and Balsamic Gnocchi
This Browned Butter and Balsamic Gnocchi is such a simple and tasty monday meal. The browned butter and balsamic together create a unique flavour that makes this easy dish look and taste delicious.
INGREDIENTS
1 Packet Gnocchi
1 Courgette
1 Red Onion
1 Large Handful Kale
1 Handful Spring Onions
Basil Oil
Smoked Minced Garlic
Butter
A Large Pinch of Diced Parsley
Balsamic Vinegar
A Large Pinch of Soft Brown Sugar
METHOD
Heat a pan of water until it forms a rolling boil. Add your stock cube and gnocchi, leave to simmer until the gnocchi rises to the top.
Dice the onion and the courgette add to a large frying pan with a tablespoon of minced smoked garlic and a glug of basil oil.
Put onto a medium heat and leave the vegetables to soften.
Roughly chop the kale and spring onions.
When the onions and courgettes have softened add the kale and spring onions to the pan and leave to simmer down.
Once the vegetables have softened move them into a bowl.
Put the pan back on the stove with roughly a tablespoon of butter and a large pinch of salt. Melt and simmer the butter until it browns.
Drain the gnocchi and add it to the pan. Toss the gnocchi and butter together.
Cook the gnocchi until it crispens up. Once its browned, add the vegetables back into the pan with a pinch of diced parsley, a small slosh of balsamic vinegar and a large pinch of soft brown sugar.
Toss everything together and serve hot with some homemade garlic bread (recipe on my blog).
