Apple and Cinnamon Cupcakes

This year seems to be flying by, I can’t believe it’s already September! To celebrate the start of the new month and season I thought I’d share these Apple and Cinnamon Cupcakes. They taste like autumn and are extremely easy to make. I hope you give them a try!

Makes 15

INGREDIENTS

2 Eggs

150g Self Raising Flour

150g Caster Sugar

120g Stork

2 Cooking Apples

2 Teaspoons Cinnamon

METHOD

Preheat the oven to 170°C.

Place the sugar, self raising flour, eggs, stork and cinnamon into a large mixing bowl.

Mix everything together until the batter is nice and smooth.

Peel, core and finely dice two cooking apples.

Add the diced apple to the cupcake batter and stir through.

Place cupcake liners in your baking tray and scoop a large tablespoon of cupcake batter into each case.

Place the cupcakes in the oven for approximately 20 to 25 minutes.

Leave to cool slightly before eating!
