Ginger Cookies
Sneaking these Ginger Cookies in before the weekend ends! These soft ginger spiced cookies with caramelised ginger chunks are definitely worth a try for my ginger lovers out there. I’ve never seen a batch of non chocolate cookies disappear as fast in my house before!
Makes 28
INGREDIENTS
250g Plain Flour
165g Caster Sugar
150g Butter
1 Egg
1 Teaspoon Ginger
1 Teaspoon Mixed Spice
60g Caramelised Ginger
METHOD
Preheat your oven to 160°C.
Place the plain flour, butter, egg, ginger, mixed spice and sugar into a large mixing bowl. Beat together until it forms a dough.
Finely dice the caramelised ginger, add it into the bowl mix them into the dough.
Take approximately a tablespoon of the mixture, roll into a ball and place onto a pre lined baking sheet.
Press down on each ball slightly. Then place the baking sheet into the oven for approximately 15 minutes.
Take the cookies out of the oven and leave them on the tray to cool slightly, before transferring to a cooling rack.
