Bara Brith

Today was an incredibly busy day at work for me due to all the rain that hit the North West. I was really glad to come home to wind down and indulge in a warm buttered slice of Bara Brith.

Bara brith is a Welsh rich fruit loaf made with tea, its name is Welsh for “speckled bread” (bara: bread, brith: speckled). It tastes so good warm with a thick layer of butter and a cup of tea!

INGREDIENTS

2 Cups Mixed Fruit

2 Teaspoons Bicarbonate of Soda

A Pot of Black Tea

4oz Sugar

12oz Self Raising Flour

2 Eggs

2 Teaspoons Mixed Spice

METHOD

Preheat your oven to 190°C.

Brew a pot of black tea.

Add the mixed fruit and bicarbonate of soda in a small mixing bowl, pour the tea to just cover the fruit and leave sit for a minimum of 15 minutes.

In a separate mixing bowl add your eggs, self raising flour, sugar and mixed spice.

Mix well to combine the ingredients.

Add the fruit mixture to cake mixture and mix well, the batter will be fairly liquidy.

Pour the batter into your greased loaf tin and bake for 45 minutes.

Bring out the oven, cut yourself a slice, butter it and enjoy!
