Tuna, Veggie Pasta

Tonights dinner is a super simple and tasty Tuna, Veggie Pasta.

Serves 4

INGREDIENTS

300g Pasta

2 Courgettes

1 Aubergine

1 Brown Onion

1 Can Tuna

Garlic Granules

Mixed Herbs

Salt

Pepper

METHOD

Put a pan of lightly salted water on a medium heat and bring to boil. Once boiling add the pasta and some oil. Leave to simmer until pasta is al dente.

In a frying pan as some oil and put the pan on a medium heat to allow the oil to warm.

Slice the vegetables finely and add to the frying pan with approximately 2 teaspoons of mixed herbs and garlic granules, add salt and pepper to season.

Keep stirring and tossing the vegetables until lightly browned and soft.

Drain and add the tinned tuna and the pasta to the frying pan.

Toss together with some more oil for a few minutes to warm through the tuna and serve hot.
