Roasted Garlic and Red Onion Potatoes

So this was a very tasty surprise using things we had left in our pantry. I will definitely be making these potatoes as a side dish when I can host a dinner for family or friends after lockdown!

Serves 2-4

INGREDIENTS

1 Packet of New Potatoes

6 Cloves Garlic

2 Large Red Onions

Sprig of Rosemary

Sea Salt (not table salt!)

METHOD

Preheat your oven to 200°C.

Slice your potatoes in half and place in a baking tray.

Roughly chop your onions and add to the tray.

Press and peel you garlic before adding to the tray.

Cover the potatoes, onions and garlic in oil, salt and a chopped sprig of rosemary (can substitute for dried rosemary if needed). Toss everything together.

Put the tray in the oven for approximately 45 minutes to an hour, tossing everything halfway through.
