Rainbow Chard and Red Onion

I made this Rainbow Chard and Red Onion as a side dish to a meal recently. It’s so tasty and takes less than 15 minutes to make so I think it may become one of my summer go to lunches over some microwave rice. Either way it's pretty, flavourful and worth a try.

INGREDIENTS

1 Red Onion

1 Large Handful of Rainbow Chard

1 Teaspoon Smoked Minced Garlic

1 Teaspoon Cracked Black Pepper

A Large Pinch of Salt

Oil

METHOD

Put a pan over a medium to high heat on the stove to warm up.

Roughly chop up the stalks of the rainbow chard and dice the onion.

Add the oil, smoked minced garlic, salt and pepper to the pan.

Mix together for a minute before adding the rainbow chard stalks and red onion.

Leave the stalks and red onion to soften, stirring occasionally so nothing sticks to the pan.

While the vegetables in the pan are softening, roughly chop up the rainbow chard leaves.

Once the res onion has softened, add in the rainbow chard leaves and mix together until they have wilted down.

Serve hot.
