Minted New Potatoes
These Minted New Potatoes are a super simple summery side dish. They’re crispy on the outside, soft on the inside and the mint gives them a fresh flavour.
INGREDIENTS
1kg New Potatoes
A Handful Fresh Mint
Olive Oil
METHOD
Preheat your oven to 200°C.
Slice your potatoes in half and place in a baking tray.
Roughly chop up a handful of fresh mint.
Cover the potatoes with a glug of oil, a large pinch of salt and the chopped . Toss everything together.
Put the tray in the oven for approximately 45 minutes to an hour, tossing everything halfway through.
