Mini Cherry Filo Baskets

These Mini Cherry Filo Baskets are the perfect bitesize treat. Five ingredients and extremely simple to make, serve them cooled by themselves or warm with some vanilla ice cream.

INGREDIENTS

600g Cherries

120g Sugar

1 Packet Filo Pastry

Icing Sugar

1 Egg

METHOD

Preheat out oven to 180°C.

Pit the cherries, add them to a pan with 120g of golden caster sugar.

Put the pan on a medium heat and let the cherries soften.

Once softened and the sugar has dissolved pour the contents of the pan into a blender.

Blend for a few seconds so there are still chunks of cherries and put the mixture to the side.

Grease your mini muffin tin with some oil or butter.

Lay out the filo pastry and cut it into squares.

Take three squares of pastry, slightly rotate each sheet so the edges are fanned out and press them into the muffin tin. Repeat until the tray is filled.

Scoop some of the cherry mixture into each basket.

Crack and wisk the egg in a small bowl. Egg wash the outer edges of the filo pastry.

Put in the oven on for approximately 10 minutes. Take out of the oven when the edges turn a golden brown and leave cool slightly in the pan before removing.

Dust over some icing sugar and serve either on their own or with a scoop of ice cream on top.
