Leftover Vegetable Fried Rice
An easy meal for when you are running out of groceries and fancy something quick.
INGREDIENTS
2 Poaches of Microwave Rice
1 Cup Frozen Peas
2 Small Onions
1/2 Butternut Squash
1 Teaspoon Cumin
1 Teaspoon Garlic
1 Teaspoon Garam Masala
Sesame Seed Oil
Soy Sauce
1 Egg
METHOD
Dice the onions and squash.
Add the vegetables to a frying pan with the seasoning and sesame oil. Fry on a medium heat.
Meanwhile cook the rice as per the instructions on the packet.
Once onions are lightly browned add the rice to the vegetables, mix together and add the soy sauce.
Once rice and vegetables are combined crack the egg into the mixture and stir until egg is cooked up.
Plate up and enjoy.
This works well with any leftover cooked vegetables or frozen vegetables too.
