Italian Seasoned Vegetable Rice

As you are probably aware by now I love a quick and easy recipe. This Italian Seasoned Vegetable Rice is a great tasting easy dish that can be made as a main meal or a side dish best of all it's super simple to make and cooks in under 30 minutes.

INGREDIENTS

2 Cups Rice

1 Courgette

1 Brown Onion

2 Salad Tomatoes

1/2 Head of Broccoli

2 Vegetable Stock Cubes

1.5 Teaspoons Minced Garlic

1.5 Teaspoons Mixed Herbs

1.5 Teaspoons Oregano

METHOD

Put the rice into a large pan with 5 cups of water and the two vegetable stock cubes.

Bring the pan to a rolling boil and leave the rice to cook for approximately 15 to 20 minutes.

Add some oil to a large frying pan, put over a medium heat to warm the oil up.

Dice the onion and courgette and add to the pan with the mixed herbs, chopped garlic and oregano.

Mix everything together and leave the vegetables to soften.

Meanwhile roughly chop up the tomatoes and broccoli into chuncks.

When the onions and courgette have softened add the broccoli and tomatoes to the frying pan.

Stir regualy until the broccoli is cooked through.

Drain the rice and add it to the frying pan.

Mix everything together and serve hot by itself or as a side dish.
