Butternut Squash Fritters

Today I thought I would try to bring some sunshine and spice to what has been a fairly dull day here in Cheshire with these Butternut Squash Fritters.

These are quick and easy to make, particularly if you have a food processor to shred the butternut squash for you. Don’t worry if you don't have one touch can always grate the vegetables using a grater or a mandoline.

Makes 12 Fritters

INGREDIENTS

1 Butternut Squash

1 Onion

100g Plain Flour

1 Egg

1 Tablespoon Garlic Granules

1 Tablespoon Cumin

1 Tablespoon Cajun Seasoning

1 Large Pinch of Salt

METHOD

Peel the butternut squash, cut in half and remove the seeds before slicing it into small enough chunks to fit in the food processor. Peel and slice the onions.

Put the butternut squash and onions into the food processor to shred it. You could use a greater or mandoline to do this by hand if you don't have a food processor.

Once shredded tip your onion and squash onto a clean kitchen towel. Wrap the towel around the vegetables and twist over a sink to squeeze the excess water out.

Once drained add your vegetables to a large mixing bowl. Add your spices and flour. Mix well to evenly coat the vegetables.

Crack your egg into the bowl and mix to combine everything.

Preheat a large frying pan with a couple tablespoons of oil. Take approximately a tablespoon of the squash mixture and place in the pan, squash slightly to shape it into a patty. Continue until the pan is full.

Fry for 2-5 minutes each side until the fritters start to brown.

Serve warm. We had them with bulgar wheat and salted spinach.
