Blackberry and Almond Cake

This Blackberry and Almond Cake is honestly my favourite cake recipe. It’s so simple to make, comes out perfect everytime and I love how the almond complements the fruit. A family friend passed this recipe to us years ago and it remains my go to anytime I can find fresh blackberries.

INGREDIENTS

1 Egg

5oz Self Raising Flour

5oz Butter

5oz Ground Almond

5oz Golden Caster Sugar

5oz Blackberries

METHOD

Preheat the oven to 150°C.

Mix together the flour, almond, sugar, egg and butter in a large mixing bowl. It should combine to have a grainy texture.

Grease the cake pan, add approximately half the mixture to the bottom of the pan.

Add the blackberries on top of the cake mixture in the pan.

Using a spoon dollop the rest of the mixture over the blackberries.

Put into the oven for approximately 25 minutes. Leave to cool before serving.
