Baked Spinach and Chickpeas

I love this Baked Spinach and Chickpea recipe. It's inspired by a tapas dish from one of my last trips to Spain but the spices aren't traditional.

Serves 4-6

INGREDIENTS

500g Spinach

2 Tins Chickpeas

1 Large Brown Onion

2 Vegetable Stock Cubes

2 Teaspoons Cumin

2 Teaspoons Tumeric

2 Teaspoons Garlic Granules

Salt to Taste

METHOD

Pre-heat the oven to 150°C.

Dice your onion and add to into a medium baking dish. Pour the chickpeas includung the water and the spinach, stock cubes and spices.

Cover with boiling water and mix everything together.

Place into the oven for approx 1hour. Take out and drain off some of the excess water.

Serve with rice or couscous.
